Seitan with zucchini in potato cream

Today I want to talk about a quick recipe I came up with one night I had very few time to prepare dinner and I was in the mood for something different. I didn’t have many options in my fridge, so I took what’s available and tried to mix them with a secret ingredients, my creativity.
The result is this quite simple but light and very tasty recipe.


 – 250gr Seitan
– 2 / 3 Zucchini
– 1 potato
– thyme
– rice miso
– vegetable milk
– Garlic
– Evo


Dice the zucchini and the seitan.

Put the zucchini in a casserole with water, extra-virgin oil and a piece of garlic.

In the meantime, boil one potato.

After few minutes, add the seitan in the casserole. I suggest to use a tender type of seitan. Add a teaspoon of rice miso.

Mix the potato using 3 spoons of the water used to boil it, 2 spoons of vegetable milk (I used oat milk, but you can use the one you prefer) until you obtain a creamy texture.

A couple of minutes before the seitan is ready, add the potato cream and stir. Add fresh thyme and season to taste and serve hot.
