Apple & Banana pie with spelt flour

How can you turn a rainy winter day into a good day? Cooking a pie of course. it has been a while since my last pie and I was in the mood to grind some organic spelt to have my fresh and smelly flour. Of course, you can use the four you like the most, I personally find spelt flour to be a very healthy and tasty choice.


– 300 gr of spelt flour
– 2 bananas
– 1 spoon of organic barley malt
– 2 apples
– 2 teaspoon organic sunflower oil
– cinnamon powder
– ginger powder
– 15gr vegan baking powder
– water





Mix 1 banana with the immersion blender. Make sure you incorporate air into your mixture, as this will help your dough to be soft as if you were using eggs (but you are not!). Mix it together with a spoon of organic barley malt, this will substitute sugar or any other sweetener.

Slice the remaining bananas and the two apples.

Knead for about 10 minutes the flour, the compound you just created, the vegan baking powder, the cinnamon and ginger powder, adding slowly water until you create a soft dough.

At this point, take a baking pan and create the first layer with your dough properly leveled, then add another layer made of your banana and apple slices.

Create a third layer with the remaining dough, then decorate the top of your pie with remaining bananas and apples slice.

Put it in the oven, 180 degrees, for about 30 minutes. I always check if my pie is cooked on the inside using a toothpick to needle it and feeling if it is humid once pulled out.

After you take it out, make it rest and cool down on a grill so to dry also the bottom.

Enjoy it with your breakfast or as dessert!
